I'd like to be able to report on how the gross pay PER EMPLOYEE is made up; so that eg I can see how much commission has been paid to each employee, over x periods

Hey Peter - have you tried viewing the payroll analysis report over multiple periods?
This can be found Reports > Payroll run > Payroll Analysis >Download as 'CSV with employee breakdown'
